Hotel Hickman Chuckwagon BBQ opening in Hamburg

Hotel Hickman Chuckwagon BBQ is expecting to begin serving up its cowboy-style food, coffee and merchandise in Hamburg beginning May 1.

The popular barbecue restaurant, with a location at 8050 Main St. in Dexter, announced on Facebook that it will be opening in the former Boogie Woogie Barbecue location at 5589 East M-36.

Owner Scott Thomas of Ann Arbor was doing cowboy reenactments with his chuckwagon in 1999 when he was asked to cook for a birthday party. From that birthday party, he was booked to cater a wedding and Hotel Hickman Chuckwagon BBQ was born.

All Hotel Hickman’s recipes were developed by Thomas, many of which are prepared chuckwagon style, with Dutch ovens over open fire.

From a mobile smoker to a bricks-and-mortar location in the Village of Dexter, the business has grown. Hotel Hickman’s sauces are also sold in various markets, including Bock Feed in Pinckney.
